• 1 jar of 300 g sauerkraut leaves (pickled cabbage), sliced
  • 1/2 tbsp paprika
  • 2 tbsp olive oil

This is an easy salad that Bulgarians enjoy during the winter months using their homemade pickled cabbage. It is sour and refreshing in taste, but also very healthy as it is believed that uncooked pickled cabbage contains precious nutrients.

If possible, make sure to use a very aromatic paprika powder, as Bulgarians use a homemade paprika specially prepared from dried sweet red peppers. Also, choose a tasty virgin olive oil.

Directions

  1. Slice the pickled cabbage leaves in thin strings. Alternatively, you can buy a jar of already sliced sauerkraut. Then, finely chop the strings into small chunks. Place in a salad bowl.
  2. Sprinkle paprika on top of the cabbage and some olive oil. Do not stir, serve right away.

Serve this salad as an appetizer, often enjoyed by Bulgarians with a glass of homemade rakia (fruit alcoholic drink resembling Italian grappa).
